Sweet Whites
The great appellations of sweet white Bordeaux are all located in the south east of the Gironde district thanks to the Ciron river that brings a micro climate favourable for the development of noble rot or botrytis cinerea, which is a fungus that brings sugar concentration in the berries. The main appellations of sweet white wines are Sauternes, Sainte Croix du Mont or Premières Côtes de Bordeaux. The main grape variety of these wines is Sémillon. These wines are worthy of a long ageing, and then move towards aromas of wax and honey.
